This study models the environmental and nutritional impact of substituting animal-source foods with either plant-based alternatives (PBAs) or whole foods (WFs). Plant-based diets reduced greenhouse gas emissions, land, and water use, with vegan diets showing the highest benefits. While PBAs increased sodium and costs, WFs offered greater affordability and similar nutritional improvements.
