This baseline assessment examines food safety behaviors and knowledge among consumers and vendors in Ethiopia’s traditional markets. The study finds that while food safety is considered important, self-efficacy and actual food safety practices remain low. Consumers often do not use food safety cues when purchasing food, and vendors rarely implement safe food handling practices. The findings inform EatSafe’s intervention strategies aimed at increasing consumer demand for safer food and enhancing vendors' capacity to meet that demand.
