This review article explores how hydrogen-assisted extraction (H2Ext) can improve the recovery of phytochemicals from neglected and underutilized plant species (NUS) to support human nutrition, food security, and sustainable food systems. The authors argue that NUS contain valuable bioactive compounds and micronutrients but remain underexploited due to weak commercialization, limited research, and processing challenges
