Digital Technologies for Sustainable Food Supply Chains: A Scoping Review of Impacts on Food Safety, Loss Reduction, and Implications for Nutritional Security

This scoping review examined how digital technologies such as blockchain, Internet of Things (IoT), artificial intelligence (AI), and machine learning (ML) are being used in food supply chains (FSCs) to improve food safety, reduce food loss, and potentially support nutritional security. The review synthesized evidence from 46 empirical studies published between 2015 and 2025.

The authors followed PRISMA guidelines and searched Web of Science, Scopus, PubMed, Cochrane Library, and Global Health databases. The review specifically explored whether technological improvements in food systems ultimately contribute to better nutrition outcomes — an area identified as critically under-researched.
