This review examines how AI, particularly deep learning, is transforming nutritional strategies to address dietary challenges across South Africa, India, and the United States. AI technologies, including machine learning and neural networks, are applied to enhance dietary assessments, personalize nutrition, and improve public health interventions. In South Africa, AI initiatives address the dual burden of undernutrition and obesity, while in India, they optimize nutrition programs to tackle malnutrition. The U.S. uses AI to combat obesity and diet-related chronic diseases through personalized, data-driven nutrition. The review also addresses implementation challenges like data privacy, algorithmic bias, and regulatory needs, recommending policies to support AI in nutrition globally.
