This study examines the environmental and economic implications of the Mediterranean diet in the United States. Using data from NHANES, greater adherence to the diet was linked to lower greenhouse gas emissions and agricultural resource demands but increased water scarcity footprints and diet costs. These findings highlight the complex sustainability trade-offs involved in promoting Mediterranean dietary patterns in the US.
