This report summarizes the first French-speaking conference on Good Hygiene Practices to Ensure Food Safety, held virtually in May 2022. The event gathered experts to discuss foodborne disease risks, particularly from microbial and chemical hazards, within the farm-to-table continuum. High-throughput sequencing technologies were highlighted as critical tools for risk analysis and pathogen characterization. Following its success, organizers plan to make the conference biannual, aiming to advance food safety practices through knowledge sharing among French-speaking researchers.
