This study assesses acrylamide intake in a Japanese cohort using dietary records (DRs) and food frequency questionnaires (FFQs). Results reveal high within-individual variance in intake, particularly for foods like coffee and potatoes. The findings underscore the need for long-term data collection or biomarkers for accurate exposure assessment. FFQs can help rank individuals but are limited in determining absolute acrylamide intake.
