Summary: This research standardizes and evaluates instant upma mixes made from minor millets (proso, barnyard, little, and kodo). The mixes were processed using roasting, soaking, and autoclaving methods, with roasted mixes being most preferred due to flavor and texture. The upma mixes are rich in protein, iron, and zinc, and can be stored for up to 90 days at room temperature. Findings suggest that these mixes could serve as nutritious, shelf-stable meal options to promote dietary diversity and millet consumption.
