This study investigates the nutritional and safety profile of fonio-ricebean-based complementary foods enriched with carrots and crayfish. Low levels of oligosaccharides, phytochemicals, and microbial counts were found, indicating minimal risk of flatulence or allergies. The dietary fiber content was suitable for infant digestion, and high sanitary standards were evident. However, caution is advised during handling to prevent spoilage due to near-neutral pH levels. The findings highlight these formulations as affordable and nutritious alternatives to commercial weaning foods.
