This study examines the shelf life of non-industrial fresh watermelon juice (FWJ) by analyzing its microbial safety, nutritional quality, and sensory characteristics under different storage conditions. Results show that FWJ is safe to consume for up to 12 hours at 4°C, but only 4 hours at 25°C and 37°C. Sensory quality remains optimal within 2 hours at 4°C, with acceptability up to 4 hours. The study provides practical insights into FWJ storage, highlighting the use of an electronic nose and GC-MS for monitoring quality changes.
