Improving the Effectiveness of Food Safety Regulation to Minimise Shiga Toxin-Producing Escherichia coli Contamination in Fermented Meat Products

This study, conducted by Food Standards Australia New Zealand (FSANZ), reviews regulations to control Shiga toxin-producing E. coli (STEC) in uncooked comminuted fermented meat (UCFM) products. The assessment found that previous regulations mandating a 3-log10 reduction of E. coli were impractical for manufacturers and difficult to enforce. FSANZ recommended outcome-based measures, supported by HACCP programs and training, to allow manufacturers more flexibility while ensuring safety. These changes aim to improve regulatory compliance and consumer safety.
