Summary: This study explores the development and nutritional evaluation of instant milkshake premixes incorporating jackfruit seed flour. Five premixes were formulated and analyzed for functional, sensory, and storage qualities. The selected premixes exhibited good fiber, protein, and calcium content with minimal fat, indicating a shelf-stable and nutrient-rich product. The premixes remained free of microbial contamination over a 60-day storage period, suggesting their potential as a convenient, nutrient-dense beverage option for consumers.
