This research assesses nutrition knowledge in adults from Australia, Canada, Mexico, the UK, and the US using the FoodProK score, which measures understanding of food processing levels. Findings reveal variations in nutrition knowledge across countries, with Canada and Australia scoring highest. Knowledge correlates positively with factors like health literacy, gender, and dietary practices. The study suggests policy interventions to support accessible nutrition education, especially in countries with high processed food consumption, to address disparities in dietary knowledge.
