This study investigates the dynamics of odor fatty acid (OFA) accumulation in the adipose tissue of Hulun Buir lambs and identifies associated metabolic pathways. Through transcriptomic analysis at four growth stages, findings show distinct shifts in gene expression: immune homeostasis dominates pre-weaning, while lipid metabolism pathways such as PPAR and AMPK gain prominence post-weaning. These insights suggest potential strategies to manage OFA synthesis, enhancing meat quality and market competitiveness.
