The study analyzes the dietary exposure of children and adolescents in Oran, Algeria, to sodium benzoate and potassium sorbate, common food preservatives. It evaluates their presence in 116 food samples and assesses consumption patterns of 1,000 participants. Results show that while average dietary exposure is within acceptable daily intake (ADI) limits, the 95th percentile of consumers exceeds these limits. Carbonated drinks and dairy products are primary contributors. The study highlights the need for stricter regulation and monitoring of preservative usage.
