Effects of a Cafeteria-Based Sustainable Diet Intervention on Adherence to the EAT-Lancet Planetary Health Diet and Greenhouse Gas Emissions of Consumers: A Quasi-Experimental Study at a Large German Hospital by Laura Harrison, Alina Herrmann, Claudia Quitmann, Gabriele Stieglbauer, Christin Zeitz, Bernd Franke, and Ina Danquah examines how providing vegan menus and educational materials in a hospital cafeteria impacted adherence to the EAT-Lancet Planetary Health Diet and reduced greenhouse gas emissions (GHGE). The study used a quasi-experimental design with regular cafeteria customers and a control group from other hospital cafeterias. Results showed a modest increase in adherence to the Planetary Health Diet among frequent consumers of the vegan menu, though no significant reduction in GHGE was observed. The findings support offering sustainable food choices as default options and emphasize the importance of improving nutrition literacy.
