The study addresses protein-energy malnutrition in young children in Ghana by developing "KOKO Plus," a food supplement designed to improve the nutritional value of traditional complementary foods like koko. The supplement, made from local ingredients, meets WHO standards for essential nutrient intake for children aged 6–24 months. KOKO Plus showed high acceptability, was microbiologically safe, and had a shelf life of over 12 months. This innovation could significantly enhance infant nutrition in resource-limited settings.
