This study assesses the microbiological safety and hygienic practices of street-vended fruit salads in Morogoro, Tanzania. Findings reveal poor adherence to food safety standards, with all vendors lacking formal food safety training and documentation. Microbiological analysis shows contamination with coliforms, exceeding acceptable levels, attributed to improper waste management and inadequate hygiene. The study highlights the urgent need for food safety education and regulatory enforcement.
