Diet Quality and Nutritional Assessment of Menus Served in Spanish Defense Ministry Preschool Canteens

This cross-sectional study assessed the dietary quality of menus served in Spanish Ministry of Defense preschool canteens (ages 1–3). Comparing direct management (in-house) and contracted catering models, the study found deficiencies in food group diversity (e.g., oily fish, fruits, eggs) in contracted models. Although menus generally met energy needs, they were high in cholesterol, sugars, sodium, and low in vitamin D, iodine, and omega-3s. The findings highlight the need for better menu planning and nutrient guidelines to support early childhood development and obesity prevention.
