How this former high-end chef is helping schools kick chicken nuggets off the menu

A school meal consultancy group is working with local school districts to replace prepackaged and highly processed foods with healthy school meals, without breaking school budgets.

In 2016, Dan Giusti - former head chef at Copenhagen-based Noma - founded Brigaid, a school meals consultancy company. The idea behind Brigaid is to help provide nutritious school meals, primarily to children who attend schools with free lunch programmes for low income families. Brigaid teaches schools "how to prepare better food in-house at a rate low enough that they can break even on federal reimbursement for the children they serve." Since its beginning, Brigaid has helped serve more than 2 million meals.
